Is Barbeque Cooking Too Difficult?

Image : http://www.flickr.com

Those of us who struggle to produce good quality meals from a barbeque may wonder whether cooking in this way is just too difficult. Is it even possible to produce great tasting food when cooking outdoors?

The answer is clearly that it is possible to have great food from a bbq. The reason why we know this is because professional chefs regularly produce beautiful meals in this way. So why does it seem to be so difficult for amateur cooks to replicate these meals?

Part of the reason is that we often fail to understand the way in which barbeque equipment works. This is is a big problem and isn't just confined to those who buy the latest top of the range Weber barbeques.

It's an issue for those of us cooking on charcoal or gas. If we don't understand how the equipment works and which parts of the cooking surface get the hottest then it is incredibly difficult to produce the right results.

There's clearly a need for a little bit of trial and error here. Before you next start to cook on your grill, spend some time looking at how it works and how the temperatures vary. Gaining a proper understanding will help you to cook better food.

One reason why professionals are able to provide food to a consistently high standard is because they've often had a lot of practice. This gives us another pointer to how we might expect to improve.

The more that we cook using barbeques, the more knowledge and experience that we gain. In essence, this is no different from any other form of cooking.

The key to producing better food is to know your equipment well and to be prepared to practice in order to gain more experience. As you become more experienced at cooking in this way, you'll find that you will also gain in confidence.

Before you know it, you'll be producing food to a high standard.

The Perfect Barbeque

Image : http://www.flickr.com

Have you ever cooked on a barbeque grill and had moans and groans all dinner long from your guests, friends or family? It is a satisfying experience especially when that constantly tells you how good everything tastes. I have been cooking special bbqs for friends and family now since the age of about sixteen and I have some useful tips to share!

Firstly you will need to invest in high quality meat. I personally never buy the cheapest cuts of meat, It's not that I can comfortably afford to buy expensive meat but the rewards are juicy. The more money you spend on meant typically the better it will taste.

First things first, Lets start with a simple steak potato and corn dinner. You will want to buy top quality steak meat to get the satisfaction of moans from your guests. I highly recommend sprinkling the steak in garlic powder and black pepper. You then want to put it in a dish and smother it with some sweet teriyaki marinade for a couple of hours. You will also want to stab a few holes in the steak with a sharp knife. To prepare your potatoes you need to wrap them in foil, but before you encase them you want to put a drop of oil, some seasoning salt, black pepper and one main herb, I use rosemary or thyme. When preparing your corn you want to give it a small layer of butter, salt and a tiny bit of black pepper.

When cooking the potato will need at least an hour and try to have a lid on the grill for the first 30 minutes before you put the corn in. The corn will need between 25-30 minutes. The steaks will need 20 minutes.

Once you start cooking the steaks and you have taken them out of the teriyaki soaked dish and cooked the first side you want to dip the cooked side back into the marinade to cover again. Do this with both sides after you have cooked them again. Make sure the fat and meat is well seared. Then simply unwrap the corn, potatoes and place a steak on the plate and voila, A beautiful steak barbeque that people will love!

The barbecue is a time to savor the smells of roasting meat and to enjoy the company of good friends. It is a time-honored social gathering and a way almost to get back to nature. The next time you hold a barbecue, check your guest list. Not everyone on the list is your friend. Who are the bad guys? Bacteria.

We live in an atmosphere swirling with fungus, yeast, mold, and bacteria. Normally these microscopic meddlers pose no problem to us. It is only when they find a suitable habitat and grow out of control that they can cause us harm. Bacteria are some of the most dangerous, because they flourish on what your are about to put on the grill: raw meat.

Here are some barbecue safety tips to help ensure that your cookout is a trip down memory land instead of a trip to the emergency room.

Use Proper Meat Handling Procedures

Dirty hands and cooking utensils can spread bacteria around a kitchen like a tornado. Always wash your hands both before and after handling raw meat. When preparing for your barbecue, never reuse a plate or container that has held raw meat. If you marinated your raw meat, never pour the marinade over partially or fully cooked meat, or place cooked meat back into the marinade. You may be adding harmful bacteria back into the meat.

Use Proper Cooking Temperatures

Heat kills most bacteria. Cook your barbecue meats to the proper temperatures to kill any unwanted bacteria. The U.S. Food and Drug Administration (FDA) recommends the following minimum grilling temperatures.

Cook ground beef to 160 F (71 C)

Cook steaks to at least 145 F (63 C)

Cook chicken breasts to 170 F (77 C)

Cook pork to 160 F (71 C) for medium or 170 F (77 C) for well done.

Note that these are the recommended minimum internal temperatures of the meat. Use a meat thermometer to check the internal temperature of the items being grilled, especially of you have thick cuts of meat. Never use a dirty meat thermometer. Always wash it thoroughly between uses so that your aren't reintroducing bacteria back into your food.

Pregnant Women Beware!

If you are pregnant, let someone else handle all the raw meat preparation and grilling at your barbecue. You shouldn't touch the raw meat dishes either, so let someone else clean up. Finally, if you are at someone else's barbecue, let your hosts know of your bacterial concerns and make sure they follow proper grilling procedures. You may want to bring your own meat thermometer.

Barbecue Safety Isn't Difficult

Soap and water, common sense, and a clean meat thermometer can take the bacterial worries out of your next barbecue.

Several Tips For Barbeque Chicken

Image : http://www.flickr.com

grilling is an art, no doubt about it. Burnt burgers, charred steaks and oh yes...raw chicken are all some of the common grilling mistakes. Chicken seems to be one of the more difficult meats to grill - it's either burnt or raw. Rather than risk sending your guests running for the door or politely eating around the burnt parts, here are a few tips for perfectly cooked barbeque chicken.

Tip #1 One of the best kept secrets of barbequing chicken is to lower the heat and wait until it's almost completely cooked before adding any sauces. In this way the chicken is moist and tender with a pleasant smoky flavor. This also prevents fire flare ups because the sauce is generally the actual culprit of these flare ups. It's the sugar in the sauce that causes the burning. When you put it on near the end of the cooking time, it won't burn.

Tip #2 In order to keep your chicken moist you can baste it constantly over a slow heat with apple juice. You can use almost anything other than wine for basting. Wine will cause the chicken to dry out and depending on what type of wine can even cause a bigger fire to occur.

Tip #3 The sugars in many sauces are often the cause for burning. Rubs are a great way to season your chicken without the risk of burning. There are many rub varieties to have a different rub almost every day of the summer.

Tip #4 Use a meat thermometer. This is particularly important for chicken because raw or undercooked poultry can be extremely dangerous. To make sure your chicken is perfectly cooked, not overdone nor undercooked; try the voice alert remote thermometers for ease. These handy gadgets tell you when your chicken is almost done so you can place the sauce on at the right moment. The voice alert also enables you to enjoy time outside without having to hover over your grill.

Tip #5 Marinades offer the best of both worlds. Marinating your chicken before you grill allows your flavor to permeate the meat and it'll be moist and juicy - perfectly grilled chicken! The there are many marinades out on the market today that keep your chicken moist throughout the grilling process.

With all of these handy tips and gadgets, perfectly grilled chicken is right around the corner. Happy Barbequing!
